Master patisserie arts and pastry kitchen management in this nationally recognised Certificate IV. Develop specialist skills in chocolate work, sugar confections, and pastry creation while learning to lead a professional pastry kitchen.
For apprentices: You must be employed as an apprentice in the patisserie industry and register with an Apprenticeship Connect Australia Provider (ACAP). For non-apprentices: There are no formal entry requirements. All students must complete a Language, Literacy and Numeracy (LLN) skills test and achieve a score of 15 across five literacy bands and 3 across one numeracy band. It is recommended that you have a passion for cooking and creativity with food, physical strength and stamina for long hours, early rising capability, interest in leading others, and ability to supply your own chef uniform and toolkit.
The course comprises 32 units of competency: 26 core units covering essential industry skills including managing conflict, budgeting, food safety and hygiene, staff rostering, leadership, cakes and specialised cakes production, pastries, yeast-based bakery products, desserts, petit fours, marzipan preparation and modelling, sugar-based decorations, sweet showpieces, chocolate confectionery, food preparation equipment, commercial kitchen practices, work health and safety, and diversity and inclusion. Additionally, 34 specialty units are available covering areas such as bread products, espresso coffee service, catering, social media management, customer service, stock control, financial interpretation, and food and beverage service.
