An advanced 6-month patisserie program for aspiring pastry chefs seeking to master high-end chocolate and sugar work, showpiece design, and pastry management. Ideal for those completing Certificate III in Patisserie who want to achieve elite culinary credentials and leadership roles in fine dining establishments.
Applicants must be at least 18 years old and demonstrate English proficiency with a minimum IELTS score of 6.0 General with no band score below 5.5. Prior completion of the Certificate III in Patisserie (SIT31021) is mandatory. Satisfactory completion of Australia Year 11 or equivalent interstate/overseas secondary education is required. Applicants must provide certified academic transcripts and relevant documentation as part of the application process.
The course covers advanced French culinary topics including decorative showpieces with advanced sugar and chocolate work to produce original designs, silicone mould making, confiserie with advanced chocolate and sugar confections, packaging and presentation of confectionery, petits fours, marzipan shaping and modelling, and caramel and nougatine work. Australian units of competency include leading and managing people, monitoring work operations, roster staff management, conflict management, planning cooking operations, managing finances within a budget, implementing work health and safety practices, developing recipes for special dietary requirements, producing chocolate confectionery, modelling sugar-based decorations, and designing and producing sweet showpieces. Business-related practices cover food and staff costing, marketing, human resources, business planning, and financial control.
