This 26-week Certificate IV in Kitchen Management prepares hospitality professionals to lead commercial kitchen operations. Combining hands-on training in fully operational kitchens with management theory, it's ideal for experienced cooks seeking to advance into supervisory and management roles.
Applicants must be at least 18 years of age and have completed the equivalent of Year 12 education. English language proficiency is required with IELTS 6.0 overall (no band less than 5.0) or equivalent. Completion of Certificate III in Commercial Cookery is a prerequisite. Students should have access to a computer with reliable internet connection, though TasTAFE provides computers during business hours at major campuses.
The course covers 23 units of competence across hospitality and kitchen management. Core units include: developing recipes for special dietary requirements, planning cooking operations, designing and costing menus, managing conflict, managing finances within a budget, developing and implementing food safety programs, rostering staff, leading and managing people, monitoring work operations, and implementing workplace health and safety practices. Eight elective units are credit transferred from related hospitality qualifications, allowing students to tailor their learning to specific career interests.
